Le CERDEN est organisé en Association Internationale à vocation scientifique. C’est la seule structure de ce type dans le domaine de la Nutrition et de la Nutrithérapie en Europe. C’est agréé par la Fédération Européenne des écoles.Le centre de formation est ouvert aux étudiants de toutes nationalités. Les enseignants font des conférences dans toute l’Europe et le Maghreb.

Le CERDEN forme plus de 100 professionnels par an qui participeront, chacun à des niveaux différents, à la transmission de la bonne « parole nutritionnelle » et à la préservation et/ou la restauration de la Santé publique . Le CERDEN mène actuellement une étude scientifique sur les habitudes alimentaires des enfants de 7 à 10 ans (publication avant la fin de cette année).
